Industry Profile - Jeff Savell, PhD, with Texas A&M University


Jeff Savell, PhD, is the youngest of five boys born and raised in Ferris, TX. His early interest in agriculture stemmed from his extensive involvement in FFA during his high school years. He actively participated in the dairy, livestock and meats judging teams and exhibited heifers, steers, market lambs and breeding sheep.

Savell received all three degrees, from Bachelors to PhD, in animal science with an emphasis in meat science, from Texas A&M University in College Station, TX. This year, Savell celebrates 30 years of teaching and research with Texas A&M.

As a Regents Professor, and E.M. Rosenthal Chair holder, Savell currently teaches four classes in the Department of Animal Science, including meat science, marketing and grading of livestock and meat, carcass composition and quality, and team teaches the HACCP food safety course.

When asked what he enjoys most about his position, Savell says, “People. There are just good people throughout.”

He says he enjoys the flexibility of his position and the opportunity it provides to do many different things, such as travel.

“I think people have a good perspective on things when they travel. It makes you a better person no matter what field you are in—whether it be a businessman, professor or cattle dealer—you look at life with a different set of eyes,” says Savell.

Savell himself has visited more than 30 countries. In the early ’80s, he played a huge role in educating personnel in the Japanese and Korean beef industries. Just this past spring, he traveled to Ethiopia.

He says the most interesting thing about [Ethiopia] is “livestock being herded everywhere you go.”

Later this year, he will be visiting China for the International Congress of Meats Science and Technology, a world-wide conference, as part of his professional development through Texas A&M.

“We are in the people business,” Savell says. “We are always dealing with people. Everyone thinks we are dealing with cattle, but it’s people.”
